This new cake truly bridges the gap between East and West. Using French pastry technics we're sublimating the traditional Chinese New Year Mandarin fruit. The cake features layers of genoise sponge cake (stuffed with mandarin zest and candied mandarins), mandarin white chocolate mousse and mandarin & thyme-infused jelly. The top layer of cream has fresh mandarin inserted giving it a marble aspect and the cake is topped with fresh mandarins from Japan and thyme.
Storage and consumption
The Mandarin Cake should be stored in the fridge until consumption. The cake can be kept in the fridge for 2 days.
